Yay for St. Patty’s, Boo for Germs!

Friday everything seemed to be hunky dory in the health department, even though the weather was gross (back to cold and rain). We headed out to the mall to escape our home which has felt a bit like prison due to the gray yuck outside for the past few months. (cute pics, just because)

then….the girls have been sick all weekend!!! Fevers, stuffy noses, watery eyes. We are SO OVER THIS WINTER! I will say we’ve been lucky, this is the FIRST time Shaye has had a fever, and she is handling it much better than Brinn.
Shaye has become obsessed with standing over the past few days although she can only get up on her knees without help. Within 2 days she has learned to “walk” holding our hands. It’s so cute. Here she is trying to master her other obsession- the stairs.
Of course at 10 months old, she loses interest quickly. She decided to venture off into the dining room.
She likes to get tangled up in the chairs and table, but is too tall to crawl under them.
The end result? Tears from head bumps. And the Tylenol must’ve kicked in…
Nap time!
Brinn’s secret spot is her closet. It is filled with her toys, dress up chest and clothes, as well as other random kid junk. I went to check on her and found her swimming in a sea of beanie babies and a boa constrictor.

She’s been fever free all day though! She missed her St. Patty’s preschool party yesterday but will be there to play with “animals” tomorrow! The class is expecting special guests (turtles and other slimy creatures) so she won’t have to miss that.
We’re praying that the first day of spring on the 21st will be the end of cold and crud!

Who is Circe?

Circe: pronounced Sur-See.
The mythical sorceress in Homer’s The Odyssey who turned men into Swine.

Have you ever listened to a pug breath? She snorts like a pig. Children in the neighborhood see her coming and run away crying. She sounds like a brute but is sweet and special on the inside.

Well, sweet and special except last Saturday when she shit on the carpet.

Low Fat Turkey Chili

When it’s cold out I love to make chili. Since our weather is terrible again, I changed it up to make it low fat.

Ingredients:
1 package ground turkey
1 small chopped onion
1 green bell pepper, chopped
3 cloves minced garlic
1 can mild green chili peppers
1 large jalapeno chopped and seeded
2 cans diced tomatoes
2 cups tomato sauce
2 cups beans- any beans you like (or that the kids will eat)
2 to 3 tablespoons chili powder
1/2 teaspoon ground cumin
1 tsp season salt.
Add a dollop of sour cream, Parmesan cheese and or shredded cheddar. Unless you’re cutting calories, then you’re only allowed chili.

It’s Mango Mania!

Shaye has been a thumbsucker since she was in utero. I quit nursing a little over a month ago, but she still “nurses” her food when she eats. After every bite, she pops her thumb in her mouth and “savors” her food with a little thumb suck. Here she is enjoying her favorite food of them all- mangoes!

Yesterday’s Fail. Margarita Pie?

The cake. GRR!
I refuse to take the blame on this, I blame Southern Living Magazine.
I’ve never bothered with cake flour before, my favorite flour is King Arthur’s unbleached but this recipe called for 3 cups of cake flour. When you compare the cake recipe on the back of the Swan’s Down box and what’s printed in Southern Living, the recipe is the same. Well, the cake turned out the texture of dinner biscuits. I was PISSED. It tasted good but unless you like to eat cake flavored sand forget it. I’m not sure what I did wrong, I followed the recipe exactly.
It reminded me of the part in Bridget Jones when she makes the blue soup. FAIL.
Here is the recipe for the Key Lime Frosting, that was delicious.
Ingredients
1/2 cup butter, softened
1 1/2 teaspoons Key lime zest
1 teaspoon vanilla extract
1/8 teaspoon salt
1 (16-oz.) package powdered sugar
3 tablespoons Key lime juice
1 to 2 Tbsp. milk
Preparation
1. Beat first 4 ingredients at medium speed with an electric mixer until creamy.
2. Gradually add powdered sugar alternately with Key lime juice, 1 Tbsp. at a time, and 1 Tbsp. milk, beating at low speed until blended and smooth after each addition. Beat in up to 1 Tbsp. additional milk for desired consistency.
