So it’s Friday and I’m down 2 lbs this week, a total of 6 lb loss in 2wks on my low carb diet.
I was so friggen swamped yesterday baking for the preschool fundraiser that I almost pulled a nasty frozen pizza out of the freeze BUT I didn’t!
Dinner took 10 minutes. TEN!
Shrimp and Mushroom Bowtie Saute (I just went light on the bowtie)
2 tbsp olive oil
2 tbsp canola butter
1 package of mushrooms
1 small onion sliced
1 bag of precooked frozen shrimp
1 tbsp minced garlic
1 tbsp lemon juice
1 tbsp apple juice or dry white wine
1/2 package whole wheat bowties
1. Boil water and noodles
2. Heat olive oil and butter. Add onions and a dash of salt. Slice mushrooms and toss in. Once both are soft add shrimp and everything else. Bring to a boil, then set on low heat for about 5 minutes.
3. Strain noodles and throw it all together. Sprinkle with some Parmesan cheese. 10 minutes!
