Cheaters Homemade Chicken Noodle Soup.

I call it cheaters because I didn’t make the stock myself. I was running short on prep time because going to the Outlet Mall was definitely priority over making dinner for my family full of runny noses.

Chicken Noodle Soup for Cheaters
(remember I feed a small army every night)
Three 1qt Pacific low sodium chicken stock
1 package of boneless, skinless breasts
(I think there were 5 decent size)
6 carrots
6 stalks celery
1 medium onion
few dashes of thyme
2 bay leaves
a few sprigs of parsley
fresh ground pepper
I poured the stock in the pot, and turned the burner on high. I cut up the raw chicken with scissors (removing anything that will make my kids gag) and dumped it in the stock. Bring the chicken and stock to a boil while chopping the veggies and throw them in. Add the seasoning, place the lid on the pot, turn it to the lowest setting. Head to the mall.

When I got home it had been simmer for about 3 hrs. I boiled up a package of egg noodles and served it with sliced asiago bread.

    Finally a recipe I can make! I have been navigating around all day looking to find a simple homemade soup, even if it is cheating a little. My whole house is sick and thankfully I've yet to get sick. Good recipe, can't wait to try it.
