I wasn’t thrilled with the lemon cupcakes I made before, so I decided to spice things up with some super delish lemon curd!
Day 28, Lemon Meringue Cupcake!
This was ridiculously simple.
I made a regular batch of nice, white cupcake batter and added about a teaspoon (or more knowing me) of lemon zest.
I cut holes into the top of each cake, and filled them with lemon curd.
Using a baby spoon….I just realized. Nice.
popped the tops back on-
Frosted with vanilla-ish lemon buttercream.
I just cut back on the milk and added some lemon juice.
Tiny lemon cake filled with lemony tartness. I will definitely be making this again.
