Day 12, ChocoCherry Cupcakes
I saw these in VCTOTW , but decided to make them non-vegan. I made a simple chocolate batter, ground up 2 hershey bars in my Cuisenart, and dumped the chocolate bits into the batter.
I used a reserve of cream cheese frosting that I had leftover from my CarrotCakes, with hope that cherries and cream cheese frosting would be a bit cherry cheesecake-like on top. It worked, and the chocolate cupcake tastes like a Hershey bar.
For the cherries on top, I made batch of chocolate ganache and stirred in defrosted frozen cherries.
I think next time I might chop up frozen cherries and put the bits in the batter as well. I can never have enough cherry!
