Day 5 is the Chocolate Mint Cupcake!
I used the basic vegan chocolate cupcake recipe, with 1/2 cup Dutch-processed chocolate, mint vegan buttercream frosting, and the chocolate ganache. (man that stuff is awesome!)
Mint Frosting:
1/2 nonhydrogenated shortening
3 c confectioners sugar
1/4c + 1 tbsp soy milk
1 1/2 tsp mint extract
1/2 tsp vanilla
drop of green food coloring
And the same chocolate ganache with soy milk I used on Day 2.
